Dunk and Roll

I was just wondering if anyone could give me the location of the "Dunk and Roll Method" I keep reading about in the posts. I've looked through most of the FAQ's and I can't find anything substantial on it.
It seems a bit similar to the idea in MMGG where you put a layer of damp vermiculite inside your cake to add moisture, but is the Dunk and Roll better? Thanks for any info.

dunk and roll.(the hanky gnome version)

1. birth your fully colonised cake into a zip-lock bag,add water.

2.place in fridge for 24 hours.

3.remove cake and roll in clean dry verm.

4.fill a shallow lid with dry verm and spray with water till nice and damp.

5.place cake on verm.

6.add dry verm to the top of the cake and mist the whole shebang.

7.place in fruiter and wait 8days on average for pins.

I was wondering, if I use the ziplock bag method and put them in my fridge, will the cake not fruit where is is sitting on the fridge? Meaning if I put the cake in lying on its side, will the cake not fruit on that side?
