jerky ideas?

ive found a few jerky recipes online and have followed through, but none which were amazing...

anyone with actual experience have any recipes on hand that is so good it would make my chicks ass sploosh?

good thread..

ive been meaning to make some jerky as well..

think im going to marinate meat in some terrikai sauce, mustard, little bit of salt, pepper. cawk sauce, little bit of cummin and brown sugar. and possibly some hot peppers of course. 

havent tried it yet.. but thats whats on the brain is thinking

I've made a dozen or so jerky batches by cutting London broil into slices 1/4" thick and seasoning the meat with a mix of equal parts salt, pepper (white or black depending on your preference) and brown sugar and then putting into a dehydrator until they're done.  That is, you can still bend the pieces without them snapping.  There's not much more to it.

Of course, that was before I learned how to make biltong.  IMO, its easier and far superior to jerky.

this is the first one i tried. it was... okay. it was missing a cayann(sp?) pepper/ cumin mix. just wasnt hot at all. too sweet for me...

this one was good as far as the spice, but it was missing something. the meat came out a bit tough too.

I've really wanted to try and make jerky but my lazy ass has never followed through.

yeah, im working on one now with a few tweaks. should be pretty good. im also gonna let the meat marinate for 24 hours instead of 8.

I don't think so.  I think Wal-mart can sell it cheaper than we can make it.  I did the calculations a few weeks back and I found I couldn't do it cheaper than they could.

umm... the amount of jerky i can make for the price is much cheaper. i can fill a huge freezer bag for around 10.00...

Yup, plus homemade (if done right) can/should blow away store bought beef jerky. IMO at least.

I havnt made jerky, but my family is a notorious for smoking and prepping tons of different meats.

Commercial beef jerky is often pre-processed. By this i mean ground, and reconstituted for the end product.

The key to good beef jerky is to tenderize it before you dry or smoke it.


As for the recipe, there are soooooo many. You will just have to find one that works for you.


Kosher Salt
Brown Sugar
Garlic
Habanero Peppers
Molassis

That would be the direction that I would head in.
