American Stout

All Grain 11 gallons finished (two carboys)

Simpson's Golden Promise 2 row pale malt  10 lbs.
Gleneagles Maris Otter 2 row pale malt 10 lbs.
Baird's Roasted Barley  1.5 lbs.
Baird's Crystal Malt 55 L  1 lb.
Castle Special B Malt  1 lb.
Castle Biscuit Malt 1 lb.
Weyermann's Chocolate Wheat Malt 1 lb.
Crisp Coffee Malt 13 oz.
Crisp Black Malt 8 oz.

Mash 90 mins 154 F dropped to 150 F at end

Amarillo 10.5% AA leaf hop 2 oz 90 mins boil
Cascade 8.5% AA leaf hop 1 oz 90 mins boil
Amarillo 2 oz 10 mins boil
Cascade 2 oz 10 mins boil

1 pack Safeale US-05 per carboy

Brewed  11/20/12
Bottled 5.5 gallons on 12/13/12 used 4.9 oz DME in water shook well after addition.  Bottled mostly into Grolsch EZ cappers.
FG 1.026

Fermentation temp was low 50 + or -.  Warmed up to room temp for 3 days after about 10 days ferment, let cool back to low 50s, warmed back up to 62 F last week prior to bottling.

Well this one tastes less sweet than I expected based on FG.  Unfortunately I didn't take and OG but the FG was higher than the expected 1.018 by quite a bit.  It isn't too dry either.  The hops come on after you taste it and just hang around in blissful bitterness.

If the flavor uncarbonated and warm is this good I can only imagine when it's cold and carbonated.  Winner!

Oops meant to say initial ferment 62 F for 10 days then let it cool to low 50s.  Warming them back up is officially known as a "diacetyl rest".  Then just stored them a while at 50s + or - but it's three carboys in a big fridge in the garage so keeps pretty steady.  Let them warm up to room temp for the final week to be sure it is done.  The smoothness and flavor of this is pretty amazing.  Trust me I don't say these things lightly.  I will likely be entering this beer in the BJCP judged yearly contest.  I predict a score of 45 out of 50 and me taking home the Hop Monster Cup.  The other reason I say this is that the finished product matches the style notes.  You can brew a good tasting beer but if it is way out of style you get dinged for that.  This one is dead nuts on the style.

Color?  It's jet black.  Real dark.  IBUs right at the top end of style along with ABV.

Nothing tatstes better than dark/stout beers, sometimes wheat beers great aswell!

Out here in the PNW we like our hops.  I've won with an American IPA (scored 48!) and an American Barleywine (scored 44).  Lagers out here are not the way to go.  It's open to whatever category you want to pick so big and hoppy can only help particularly if you stick with American hops.  Honestly though I am a monster master brewer.  Just a monster.  Cmon these other guys are using pellet hops and Briess malts and mashing in plastic coolers then artificially carbonating.  Who you think gonna win between me with the top malts in the world fresh leaf hops all stainless steel and the master recipe man?  120 batches under my ever expanding belt.  LOL.

Now, as to a stout winning none has yet.  The actual contest is 2 months off...

For myself, im more of a reader, i did few brews including wheat beer but thats about it... Looking forward for my release (in 2 years) from the army to get back into action :yesnod: Never thought ill miss that much my hobbies:frown:

Last night I took over my stout tasting sampler package to some close and trusted sampling friends.

1.  Are You Hoppy Stout 1st bottling - resounding "winner".  Chocolatey goodness so smooth tasty and rich melts in your mouth with a creaminess of mocha and bittersweet citrus hops.  Hey it's good shit!
2.  Are You Hoppy 2nd bottling (extra month lagering) - only been in the bottle about 10 days, a little smoother but needs time, 1st bottling more to style.
3.  Putin Out Russian Imperial Stout oak aged - bottling it today but took an early sample.  Oak not as strong as I thought it would be, which is a good thing.  Time time time needed.
4.  Blackberry Stout - this is a separate project with a massively strong stout that I ended up with 3.5 gallons of and added a full 2+ gallons of hand picked frozen blackberries to.  You would not believe the pulp balls I ended up with having to squeeze the fruit out at the end (sanitized gloves).  Couldn't waste that goodness.  Oh my that stuff is scary good already.  Tastes a bit like Jagermeister!

Today is the competition day with Are You Hoppy being entered.  First place is a very cool cup I had local artisans create with some ideas from me.  It's a Hop Monster holding up a Pimp goblet.  Second place is a March pump.  Third place is a hand carved wood mash spoon that looks like it took one of the members many hours to make.  And lots of raffle prizes etc.

Final results - Are You Hoppy finished first with an average score of 43.  Twelve entries.  Same club member and a pro finished second for second year in a row to win the March pump with an average score of 39.  Another member and pro finished third to win the fancy carved spoon.

Cool, your recipe sounds like it's pushing the bounds of the description of an American Stout, but the extra hops make it more palatable to me.

Well I ended up making my own recipe. Regardless it will still be a hoppy stout.  2 oz of simcoe sitting in the secondary as I type.
