How would you build a mushroom farm?

If a person gave you $100,000 to build a mushroom farm, how would you build it?

as enviormentally friendly as possible. well there are tons of variables. Are you talking about indoor or outdoor. what kinds of mushrooms?

Mushrooms would be only one aspect of the permaculture farm. Included but not limited to would be; vegetables, herbs, entheogens, nuts, fruits, trees, bees, aquaculture... a rather jack-of-all-trades farm with the possibility of workshops & classes once established.

Substrate. And lots of it. Hell, I could get a location for a year for $12k, power and water for another $12-$14k, and growing equipment for under $3k. I would have a hundred or so half-pint jars for making quick cakes, and probably fifty to a hundred tubs for bulk. After a month or two of going easy and making a little money, I would buy the REAL equipment. I would build about 50 to 100 green carts. a 2'x2' platform with trays that go up about 6' high. Each tray would have casings with lights and automatic misting running along the bottoms of each tray (for the tray below it). The carts would be individually covered, and each would have its own hydrometer/thermometer combo. I would have 3 rooms for the carts. 2 for incubation, and one big one for fruiting. Along with one cooler. This could all be done easily for under $75k. And if you're growing psilo's, my method would yield enough steady product to where I would have WAAAAY too much overstock where I live. I was considering growing Ports or something like that commercially, but I just dont have the startup costs covered.

I'd probably do something like get a place near a carpentry shop and/or wood processing center and do tons of Shitake mushrooms. Plus I know that the power hookup would be first class since I would be right next to a massive power hog like a wood processing center so they get first priority.

    Sustainability is my main objective:) Indoor and outdoor simultaneously growing will be the ultimate goal(On logs and in bags). Not sure on species yet, but they will be as "healthy" as possible.

    The "Earthship type structure" will contain at least: herbs, veggies, and farmed fish. The farm already contains organic veggies, trees, bees, livestock, and bio-diesel. I am building an "Earthship" type structure this summer that contain all of the above, but I hope to add fungi:) I will be camping out on the farm during the construction. Also, the farm already hosts workshops covering most activities in our community. 

P.S. We plan on using "gray/black" water recapture:)

    The type of detail in your post is what keeps me going. I will strictly grow edibles from now on, for I'm not going to jail for manufacturing schedule one drugs.
 
    What type of structure/s would you build? Would it be underground? Walk-in cooler?

    The farm has an on-site carpenter, plumber, and electrician. Also, we have a wood mill up the road.

    All of the wood is hand processed by myself. I take part in everything from thinning trees to milling lumber. I refuse to use anything that uses gas or diesel. Even though we process bio-diesel, I still limit my fuel consumption by using hand tools to strip and move lumber.

The land is free, and lumber is "connected" through the farm. So, back to my question. Would you build an above ground or below? Can we use thermal cooling? Has anyone looking into "earthship type" structures? I'm doing this either way, I just want it to be as sustainable as possible.
