Shiitake fruiting too early - still in the bag

It's been 25 days since I spawned shiitake grain to this block (first time trying shiitake).  I posted a couple of weeks ago (here) when it was starting to popcorn.  Well, now the bag appears to be in the stage of browning. However, I've noticed that what I previously thought were just really large areas of "popcorn", are infact mushrooms. 



I've read in other posts that over-supplementation can cause some pretty weird things to go on with shiitake.  My blocks consist of 8 cups sawdust, 2/3 cup bran, 1/3 cup gypsum.  Also, I spawned a full quart of grain spawn to these blocks, which I realise is alot and could account for some strangeness.  But what do people think?  Is this still normal, should I keep them in the bag for another month or two?  Or strip the bag off soon and let these develop?

I have to admit, the shitake in that first photo looks like it would be good to eat if you just cut an "X" to let it out.  You wouldn't even have to open up the entire bag.  But, ya, it'll be a few months before it browns, so I'd be tempted to get an early shitake.

Leave them in the bag.  You oversupplemented.  I make bags that size, but use 2 1/2 cups of oat bran for 9 bags.  You're using three times that amount.  Spawn rate also matters.  I use 1:20 at that supplementation rate.  If you're using more grains than that, reduce your bran even more.

I also use a cup of gypsum for those 9 substrate bags, so you're also using three times the amount of that.  Your mix is fine for oysters, but not for most strains of shiitake.

Thanks for your comments/advice on this, sorry for not replying until now, I've had limited access to internet for the last few weeks.  I have left all the bags to brown off normally. 

One more question:
When the substrate has browned off and is ready to birth, what should I do with the mushrooms that have already formed?  They have mostly turned a strange colour now and I doubt they'll be good to eat.  Should I cut them off before the dunk, or just leave them be?  They look like they'll rot the minute I expose them to air.

What strain of shiitake are you using saintpedro?

Hi showup, it's a shiitake 75 strain.  I think 75 is one of the most reliable strains, but this is my first shot at shiitake so I'm by no means an expert!

By seeing the posts in here and the extend of pinning in your case the Shiitake 75 appears to be a fantastic strain but you may get mutated fruitbodies because of heavy supplementation.
