I took some really nice red bell peppers and cut the top off, de-seeded/cored them. Then I stuffed them with feta cheese. An herb infused feta would be ideal. I then baked them in a preheated oven at 425 for 45 minutes on a pizza stone(well seasoned stone to avoid sticking) turn after 22 minutes. I took them out and peeled as much skin as I could (optional). I served them on a small plate with extra virgin olive oil with cracked black pepper. I also added a small amount of balsamic vinegar for a nice bite (optional). Serve with pita bread warmed or any bread of that type. Or bread/food of your choice.

Its good. I like that its a little more natural then craft mac and cheese :shrug: and considering im in "Hippie town" the stores here sell it for pretty cheap

Would you eat a grilled chicken wilted spinach salad? I take the chicken and marinate in teriyaki for at least an hour then grill it. Set aside to cool. Fry bacon and save the grease. Mix leftover bacon grease with some kind of vinaigrette (raspberry works well) at about 50/50 (or desired amount) ratio. Heat it, crumble the bacon on the spinach, and mix with feta and dried cranberries. Add some walnuts or nut of choice. Pine nuts work well too. Put warm dressing on salad mix (amount desired) and toss. Serve immediately. Goes great with a bruschetta bread.
