World Seed Supply’s Easy Pickle Recipe

Ingredients:

Pickling Cucumbers
4 Cloves Garlic
3 Cups Water
¼ Cup Kosher Salt
1 gram Coriander seeds
½ gram dill seeds
3 sprigs of fresh dill and/or 1 tsp dried dill

The number of cucumbers you will need will depend on the exact container you use and the size of the cucumbers.  We generally find quart size Chinese soup containers or full quart mason jars suitable.  An ideal cucumber size is about 3”, although you may end up with different sizes in your batch. 

Start out by slicing your cucumbers into spears.  Afterwards, you will want to slice your garlic thin and then cut the slices in half once.  When you are close to being done, add your water, kosher salt, coriander, and dill seed to a pot and bring to a boil.  Place your cucumber spears, sliced garlic and fresh or dried dill in your container.  Once the contents of your pot reach a boil, add them to the container as well.  Set the container aside until it cools, then refrigerate.  Allow 2 days or more for best flavor.  It’s as easy as that.  In just minutes you can have all the exceptional pickles you could want. 

Feel free to adjust the garlic and salt to your taste.  You may also substitute more of either dill seed or coriander seed if you do not have both.  It is also worth noting that you will tend to have a bit more brine than you will use in one container of pickles, so you can always carry it over to the next container.  After you eat the pickles from one container, you can also reuse the brine many times for later batches without doing anything but adding fresh cucumbers.

Mmm... I loves me some good pickles!

I am very interested in making some "no-boil" cucumber pickles.

Maybe it's my Polish heritage, or my unwavering lust for Kimchi, but the natural Lactobacillus fermentation sounds a lot more interesting and biologically beneficial.

Polish style pickled cucumbers (Polish: ogórek kiszony, plural: ogórki kiszone) are a type of pickled cucumber developed in the northern parts of Europe and have been exported worldwide and are found in the cuisines of many countries. As opposed to some other varieties of pickled cucumbers, they are prepared using the traditional process of natural fermentation in a brine which makes them grow sour. The brine concentration can vary between 20g/litre to more than 40g/litre of salt. There is no vinegar used in the brine of a Polish-style pickled cucumber.

The fermentation process is entirely dependent on the naturally-occurring Lactobacillus bacteria that normally cover the skin of a growing cucumber. Since these are routinely removed during commercial harvesting/packing processes, traditionally-prepared pickles can only be made from freshly-harvested cucumbers, unless the bacteria is artificially replaced.

Typically, small cucumbers are placed in a glass or ceramic vessel or a wooden barrel, together with a variety of spices. Among those traditionally used in many recipes are garlic, horseradish, whole dill stems with umbels and green seeds, white mustard seeds, oak, cherry, blackcurrant and bay laurel leaves, dried allspice fruits, and — most importantly — salt. The container is then filled with cooled, boiled water and kept under a non-airtight cover (often cloth tied on with string or a rubber band) for several weeks, depending on taste and external temperature. Traditionally stones, also sterilized by boiling, are placed on top of the cucumbers to keep them under the water. The more salt is added the more sour the cucumbers become. Since they are produced without vinegar, a film of bacteria forms on the top, but this does not indicate they have spoiled,and the film is simply removed. They do not, however, keep as long as cucumbers pickled with vinegar.

The concoction produced during the fermentation process, containing vitamins and minerals, is often consumed as a drink; it is also considered to be a remedy against hangover.

In Russia they are traditionally served as a side dish to vodka. In the United States and Canada, especially in Jewish communities and delis, they are sold alongside kosher dills in "full sour" and "half sour" varieties.


Lime

Lime pickles are soaked in lime rather than in a salt brine.[5] This is done more to enhance texture (by making them crisper) than as a preservative. The lime is then rinsed off the pickles. Vinegar and sugar are often added after the 24-hour soak in lime, along with pickling spices.

The lactic acid fermentation pickles are better, I made some last summer with cucumbers, going to make some this summer. I'm going to dry some grape leaves this year, and add a couple leaves to some of the batches I'll make. I've read that a few, grape leaves added to the pickle mix, makes for crisper pickles.

Allowing the boiled brine to cool before adding them to the cucumbers would result in a bit crisper pickle. 

I like the taste and instant satisfaction of the original method, but I have been debating a test of your method.  Is there any chance that the wrong bacterias could predominate?

Yep, but the more salt you add to the mix the less likely that becomes. The lactic acid producing bacteria are salt tolerant and tolerant of lower PH's than most bacteria.

A great way to kick off lactic acid pickles is to use whey leftover from cheesemaking. Comes with the right culture :laugh:

Also, I've been told that telling when the wrong thing has happened is pretty simple: the pickles will smell AWFUL, one won't even have to taste them.
