does anyone know a good stuffed pepper recipe?

If anyone has a fairly easy recipe for stuffed bell peppers,I would appreciate it very much.I'm not much of a cook but I love stuffed peppers and would like to know how to make them.
Thanks in advance for any advice.

I made these a few weeks ago
super easy and pretty good too
get yourself 4 large green peppers - cut the stem out and clean out all the seeds
get a box of spanish rice mix - I used Zattarian's (sp?) - this will be near the uncle Ben's and should be less that $2 a box
brown some burger while you are cooking the spanish rice
add burger to rice when done
stuff peppers with rice/burger mixure and top with plenty of grated cheese
bake at 300 for 30-40 minutes or until peppers are done to your liking

Mmm! I love stuffed peppers! I don't dig the green ones too much though... I used this recipe a couple months ago. SOUTHWESTERN STUFFED PEPPERS 6 large green, red or yellow bell peppers 1/2 pound Italian sausage or chorizo, casing removed 3 cloves garlic, minced 1 package (8 ounces) Pepperidge Farm cornbread stuffing 2 cups shredded Jalapeno Monterey Jack cheese 1 can Chicken Broth Slice tops off the 6 peppers core and discard seeds. In a large saucepan, place peppers in enough boiling salted water to cover. Cover and simmer on low heat for 5 minutes. Drain peppers upside down on paper towels. In a large skillet over medium heat, brown the sausage and garlic, stirring to break up the meat. In a large bowl, combine sausage, stuffing, cheese and 3/4 cup of the broth. Combine well. Fill each pepper with stuffing mixture. In large saucepan, combine the remaining broth and chopped red pepper. Arrange stuffed peppers in broth. Heat to boiling. Reduce heat to low. Cover; simmer 15 to 20 minutes or until peppers are just tender. In covered blender container, carefully blend red pepper broth mixture until smooth. Serve with stuffed peppers. Serving Size: 6

here's a pretty simple one i like. gut the peppers, (use smaller peppers), stuff with a little pepperoni and cheese, beer batter them and deep fry in peanut oil. good stuff!!

i guess that's not really your average stuffed pepper though...

Here's how my mom made her stuffed bell peppers:
ingredients: 4-6 large bell peppers; stemmed and seeded 2 cups white instant rice 1 lb ground beef 1/2 lb montery-jack cheese; shredded 1 package cream cheese; cubed 1 jar (or can for city folk) stewed tomatoes 1 package of spaghetti seasoning 1 small can crushed black olives 1 package sliced fresh mushrooms, or a small can of canned mushrooms 1 medium sized red onion; diced 1-3 cloves garlic olive oil
OK cook rice per instructions on box, while rice is cooking start browning hamburger meat. Dice up the onion and mushrooms and add it to meat when it's halfway done; season meat with a few cloved of garlic salt and pepper. drain meat when it's done; set aside
about the time the meat's done the rice will be done. Add tomatoes (drain only like half the juices from the tomotoes) spaghetti seasoning, half of the montery-jack cheese, all of the cream cheese, and olives. Mix thouroughly, make sure everything melts evenly. Easiest to nuke the cream cheese for a few minutes in the microwave before dropping it into the rice mixture. once all the cheeses are melted remove from heat and dump in a big glass bowl; mix in beef.
while the rice stuff is melting together preheat oven to about 425
take your bell peppers and lightly coat with olive oil, then rub on a little course salt and dehydrated garlic (or garlic powder/salt) over the outside.
scoop rice mixture evenly into bell peppers, arrange peppers on cookie sheet, then top them off with the remaining shredded montery-jack cheese
bake for 15-20 minutes or until cheese on top is melted and slightly browned
if you like spicy then you could add jalapenos and cilantro to the rice and use a spicy taco seasoning instead of spaghetti seasoning, and on top of the cheese you could add a few slices of jalapenos
