Big sack of potatos

Hey guys, i need ideas.



I've got this really big sack of idaho potatoes given to me as a gift (strange i know).


Anyways, i want to know, first of all, how long can i keep em before they go bad



and secondly, i want as many potatoe recipes as u guys can muster.  Nothing hard, 

just really simple simple but solid recipes for cooking russets.

Keep them in DARK place, if you dont do it they will root and wont be eatable.

a dry place is also very important, and if your talking about a really really big bag of potato's i would prolly throw a dehumidifer beside it, i dunno if its needed or not but moisture and light will cause it to grow

if i were you i would just get to peeling and make a crapload of mashed potato's, then throw them in the fridge and make you potato pattys in the mornings.

another option is making mashed potato's but don't add any milk or cream, just water, then dehydrate them somehow and poof you have potato flakes for instant potato's

Porcini Basil Chowder.

you could substitute any number of flavorfull things for the wild mushrooms, from seafood to sausage to other vegetables.

corn and/or carrots go well in a chowder for example.

one thing you can do with any of the spuds that may start to soften up, or try too hard to sprout is plant them. it doesn't even have to be on your property [guerrilla gardening FTW].

hahah i already used alot of it for mashed taters.  And I each mashed taters with alot of just sauteed meats nad stuff, it's great.

Cut fries out

Get a ziplock bag and put oil, salt and seasoning in it

add fries, seal, and shake

bake at 400 for 10-15, then flip fries and bake for 10 more mins.

Also, you can freeze potato puree (and I have), but I wouldn't use the defrosted puree in any application that's too dependent on texture. Soups and sauces are pretty good ideas. Internet sources also suggest you can freeze fries and pre-cooked, cubes potatoes, but I haven't tried this.

Kartoffelpuffer, or latkas as they're called in the jewish tradition, are awesome.

Shred some potatoes, chop an onion, throw in an egg and a TBL or two of flour, salt + pepper.  Fry them in a pan and spread them pretty thin when you do.  Most people put apple sauce or sour cream on them, but I like to mush up some avocado on them and dress with a few dabs of :sriracha:

Idaho Tacos

Bake yer tater
scoop out 1/2-1/3 of yer tater guts
fill tater with taco meat, cheese, salsa, sour, olives, pretty much whatever the fuck ya want eh

does peanut oil work pretty good for fries n such?  and how long can i use the same oil, i heard someone say one time that you can freeze the oil so it keeps longer.  this was in reference to turkey frying btw, but it sounded like a good idea all round.

anyways yah there's another idea, deepfrying some tators, not just fries but scalloped potatto's and i bet you can throw a whole potato in a fryer too, do people do that lol?  wth would it be called, not a baked potato of course

Peanut oil works good, not sure how long you can use the same oil, if you're just cooking fries probably a pretty long time, if your cooking other stuff in it, not as long.

That would be called a potato bomb. lol

pan fry them with vegetable oil.. oinions, garlic even if you like it.. use GREEN onions, and garlic salt too, just a little bit.. also if you can find french fry seasoning at your store, put that on there, a good amount wont hurt.. its soooo bomb.. make them a little crispy on the outside but kinda soft on the inside.. bomb for tacos

if you have peanut oil, i also vote french fries, but skip the oven.  This is my favorite way to store potatoes long-term =D.

Peel them, cut them into sticks, rinse them, then fry for 6-8 minutes at 260 degrees.  the oil should be so cool it takes a good 20 seconds to start bubbling after the fries go in.  you want them to be fully cooked, but with absolutely no browning.  now you just just freeze em and bag em up in ziplock bags, and it's the exact same frozen fries all our favorite chain restaraunts use... only better.  fry them right out of the freezer at 365 for 3-4 minutes and you'll be blown away.

last time i made fries i did a 10# bag and had my whole sink full of fries cut.  when i was done, i had 4 1/2 ziplock bags filled with fries.  awwww yeah ;p.



ps. peanut oil is absolutely the best french-fry oil, for me just having it around is an excuse to make fries.
