The Dining Room at Langham
    #10999313 -

Always enjoy trying the food of prominant up-and-coming chefs.

Not to mention he's on this season's top chef.

I had been to the Bazaare when it was opened by Michael Voltaggio under Jose Andres.

This was his new gig, decided to try it out.

Funny thing is, i was initially turned away for being "below the dress code" despite wearing the same outfit at higher rated establishments.

Still worth the experience.

Amous:

Foie, blue fin tuna, in a pickled cantalope gelee, surrounded by red rock salt.

Jamone Iberico with baguette crouton, cantalope, basil sauce.

Butter-poached king salmon, porcini mous, porcini sauce, porcini crisp.  Best dish of the night.

Tomato tar tar, yellow tomato alginate sphere on a thin parmesian gelee.  Replicating an egg.  Pretty clever.

Sous vide veal cheak, baby criminis, lentil clusters, dehydrated bacon

Kuroge beef, soy poached eggplant, nori-truffle rice cake

Peanut butter and jelly ice cream pearls, just think of those dip n dots.

Coffee lava cake, nitro latte, sugar-encapsulated lemon murange.

Very good meal, very focused flavors.  Towards the end i was getting sort of the salt-butter over-satiated feeling, but that's expected with a meal this decadent.

The deserts were also very enjoyable.

"below the dress code"?

I would throw a rock through the window of any place that told me that and I almost always wear golf course attire..

I can't remember when I've been out without a collar and slacks.

I will just never understand the higher end.  Then again I work in the food selling industry and I've worked from selling the worst of the cheep to the best of the mark-up.    Let me tell you, you can't tell much of a difference except for when it comes to meat.

I don't see much meat on them plates..  I don't see much of anything...

How much did you pay?

Hm, considering you just got out of school Im going to guess you either studied law or medicine.  Correct?

Anyways that looks interesting, though less interesting than the previous dinners you have posted.  Im going to be in Koreatown on Saturday, you should stop by, Ill be the white guy hitting on the asian women.  Im going to be cruising the subway all day so make yourself known somehow

Just so I can act like I know what I'm talking about:

Does the plating kinda suck?
All the dishes except for the high end dip 'n dots are on the exact same plate, right?
Plus they all look the same. Similar colors, shapes, sizes, designs, etc.

Some of that looks good.  One day I'd like to eat at a fancy place like that.

I can't help but laugh a little while picturing you pulling out the camera and snapping photos of every plate.  The fellow diners are probably like :wtf:

Each plate itself is small, but the whole purpose of a menu tasting is to experience a diverse array of platings, rather than just getting full off one dish.

And yes, it is a ton of food once you put it all together.  And this is coming from someone who orders two double-doubles and animal style fries at in n out.

Medicine.

But my income comes from online poker.  I make more money on a weekly basis from poker than most doctors dream of making.  Which is why i've been hitting michelin rated establishements pretty much every other day.

It's really the signature style of the chef.  Hes known for really compact focused presentations.

A pretty interesting contrast from alot of french chefs, who tend to drizzle sauces all over the plate.

And yeah, alot of the plates he uses are the same.  He's still really a budding chef, im sure he's working at improving those things so its forgiveable.

The food and platings were pleasant and enjoyable, but still the experience doesnt compare to my previous two posts about Providence.

wow nice! really excellent

and the price isn't bad to be honest...it's much more expensive here for taster menus if you compare the eur to usd conversion rate...

when i'm back home we def need to hit up some nice restaurants, it seems like there aren't that many people who dig fine dining in a sense.

in oct i'm off to amsterdam and making 2 shroomerites go with me to their 3 star michellin restaurants...librije and the supper club. let's see how that goes..i'll take some photos!

Wow, you're serious!  Can't wait to see what those look like. :smile2:

I can't say that I actively seek these sorts of establishments myself, rather I generally try to find a "hole in the wall" with generous savory portions and a value oriented pricing structure... That, or cook for myself and my loved ones at home!  I have been fortunate to have experienced a few of these upscale joints, most recently by my friend right here in this thread, LiquidSmoke - who was kind and generous enough to sponsor my lady and I for this Dining Room tasting!

Just another one of the perks of being a Shroomery admin I suppose! :tongue2:
But seriously, this was well outside my norm and I am grateful to have experienced it.

Here's the review I wrote for OpenTable.com:
Quote:
The Dining Room at the Langham is not a casual affair; I was upon first visit turned away for wearing cargo short pants! Despite this rather silly dress requisite, I enjoyed a tasting menu of six courses created by chef Michael Voltaggio. With a cost of roughly $135 per person, this is not an inexpensive establishment, however the obvious attention given to the fine cuisine and service does merit some premium. The only complaint I held was the at times too liberal use of salt on the savory dishes. The butter-poached king salmon with porcini mushroom mousse, sauce & crisp was off the charts and the sous-vide veal cheek was unbelievably tender, juicy & delicious! If you can get past the stuffy atmosphere & high price, the food here is great!

And an additional private comment I sent to the restaurant:
Quote:
While I love tomatoes and appreciate the playfulness and uniqueness of design for your Tomato Tartare, the resulting texture and flavor of the dish was rather unappealing; too watery & lacking spice.  Thank you for the rest of the fantastic meal!

            Our servings unfortunately did not
            include the melon-balled or peeled
cherry tomatoes shown in this pic.
Nor the small blue (hibiscus?) flowers.
