Storing fresh shrooms

I was just wondering if you could store fresh mushrooms for more then a week by vacuum sealing them or canning? I know you can buy canned mushrooms, but I realize all mushrooms are different. Would vacuuming out the air either in a container that came with the vacuum sealer or a special bag keep them fresh? I couldn't find the answer by searching. All I know is mushrooms turn to mush if not dried, and I'm just thinking of ways to store them fresh without losing potency or the mushroom itself.

they will last close to a week in a brown paper bag in the fridge. anything sealed would not be good. if you dont wanna dry them then i would go with the paper bag in the fridge.

i would think that if you vacuum sealed them they would mold. but i am not sure. you cant can them because the heat will break down the active chemicals in the mushrooms.

how long do you need to store. why not just fan dry them:shrug:.  you dont lose much if any potency and they last a long time cracker dry.

Yeah, I was looking for a way to can without using heat. I don't know if it is possible but I've been looking. I was also thinking what if you put the mushrooms in something that prevents them from decaying, then suck all the air out of the container, vacuum sealing it. I was thinking it would be like canning it, but using a  vacuum to seal the container instead of heat. Maybe like pickle it or something, haha. Idk, I'm just thinking out loud.

Heat is not responsible for breaking down the psilocin. Psilocin is unstable due to its phenolic hydroxy group. Most of the time, what's responsible for degradation is exposure to oxygen.

While psilocin may degrade under some degree of heat, there are no studies out there on the subject, and until there are, we shouldn't spread information around that isn't necessarily true.

It's the presence of oxygen that is most harmful to the active alkaloid, not heat. Anecdotally, I've sautéed cubes before in butter and garlic, and not only did they taste better, there was no perceived loss of potency when compared to the same dose several days later that had been dried and not exposed to heat.

So does that mean that canning could work? Or would they still turn to mush? I would be interested in trying it sometime down the road. Or vacuum sealing in a fluid.

I don't know if canning will work, I've never actually tried it. Was just correcting the other guy's wrong information about why canning wouldn't work.

This is what I have always heard,I myself have not personally done it cause I hate fresh mushrooms and can not eat them but this is the route I would go,only because I have seen so many others say it works well

That's all I've ever herd is "about a week in a paper bag in the fridge". I wouldn't store fresh any other way. Every other offered method just sounds like the mushrooms would turn into a nasty, black, lumpy sludge. If you want to store longer then a week, make a decissant chamber. Go to your local hobby shop and ask them were they keep the silica gel for drying flowers. I like this over damp-rid as damp-rid turns to liquid and isn't reusable. Silica gel is. Anyway, pour some of this into a tupperware container, cram in a screen to keep the mushrooms off the silica gel, toss mushrooms on top of that, put lid on, forget about it for a few days. Bam. Cracker dry mushrooms.

You could also try turning a fan on them for a day then throwing them into a decissant chamber.

Jars of honey does work perfect! That's how I used to store mine so they would always be fresh and tasty. Its so easy to eat them like that when you are ready too. TREATS!!!

Kitty litter silica is great stuff to have on hand as well,id either fan or dehydrator dry and than store on that stuff >>
