ny strip or ribeye, thick cuts with an intenral temp of 150 on the dot.

i like diffrent cuts for diffrent reasons. a fat KC strip wins in the all around catagory. mmmm jucy i me some demi glase on that bitch too. or butter. cooked med-med rare. i like it cooked med and right at the bone it will be perfect med rare.
i think maranades are not allowed accept for flavoring sirloin, flank, or any other "flavorless" cut. strips/fillet/rib eyes are not allowed to be maranaded/katsuped/sauced, demi glase is all that i like it thick too. reduse reduse reduse. i like it to be like sludge with a food cost of like $5/oz . the thicker the better. i dont consider demi glase a sauce at all. i think of it as an enhanser. lol
i could type about meat all night long... so many delicious cuts...
