About to make my first steak the right way!

Fucking heating up a skillet in the oven. I didn't even know this was practiced. Going to cook the sides of it outside the pan and then put it back into the oven! Glazed it with some oil, salt and pepper. Should be delicious.


Oh its ribeye!

Let it rest five to ten min's after.So, the juices will be sucked up into the meat..

This is the recipe I use.  They come out great!


Ingredients

    * 1 boneless rib eye steak, 1 1/2-inch thick
    * Canola oil to coat
    * Kosher salt and ground black pepper

Directions

Place 10 to 12-inch cast iron skillet in oven and heat oven to 500 degrees. Bring steak(s) to room temperature.

When oven reaches temperature, remove pan and place on range over high heat. Coat steak lightly with oil and season both sides with a generous pinch of salt. Grind on black pepper to taste.

Immediately place steak in the middle of hot, dry pan. Cook 30 seconds without moving. Turn with tongs and cook another 30 seconds, then put the pan straight into the oven for 2 minutes. Flip steak and cook for another 2 minutes. (This time is for medium rare steaks. If you prefer medium, add a minute to both of the oven turns.)

Remove steak from pan, cover loosely with foil, and rest for 2 minutes. Serve whole or slice thin and fan onto plate.

My Favorite:

Pan Seared Pepper Crusted Filet Mignon

- Coat filet in olive oil and genereously coat in coursely ground black pepper.
- Heat olive oil in black iron skillet until *almost* smoking (BUT NOT SMOKING)
- Sear all sides of filet until nice and carmelized
- Place in 435 degree oven until medium rare or medium

Now, THATS the shit!

Don't use a skillet cook it over a charcoal grill using indirect heat. Trust me my man  you will know the difference. Please for the love of god don't burn it cook it rare. Also let the meat rest 10 to 20 minutes after cooking . This will make the meat tender and juicy.

Yeah I didn't have the means to grill it. Did it the way in the OP, was all right. Cooked it a little too much though. I like meat medium rare, but by no means rare.I was worried it would be raw so I left it in a little too long. Still a vast improvement on my prior steaks, I'll know next time to cook it a lot less.

That is the exact recipe I use.  As far as I know it is Alton Brown's. 

To do it exactly right, when you take it out of the fridge, cover both sides with kosher or sea salt.  This will help to break down the tendons and bring juices toward the outside for optimal caramelization.  Let it rest with the salt for an hour and then wash it off, pat it dry and add the oil/seasoning. 

You'll notice a big difference with the color and texture when the cooking is complete.

Dude, I know how to cook a fucking steak, I have grilled hundreds of em.  This thread is about pan searing/oven cooking steaks.  And trust me, pan seared filet is GOOD.

I don't understand why you'd pre-heat the skillet in the oven when sticking it over high flame on the top for a few minutes prior to slapping the meat in would do the same thing.

Huh?  You put the meat in the HOT skillet to sear it, then put in a pre-heated oven.  You don't have to preheat the skillet, except over the stove.

Post #4 says preheat the skillet in the oven, and if I can decipher the OPs English, it sounds like he was suggesting the same thing.  I'm not sure why you thought I was responding specifically to you.

Its to make the pan at a much higher temperature.

The idea is to put the skillet into the oven cold and bring it up to temp with the oven.  The reason is because if the temperature of the skillet changes too quickly it can crack.

Some have mentioned it but it hasn't been stressed enough.

Letting the steaks sit and get to room temperature is the single most important part to cooking a good steak.

Seasoning and handling and blah blah all come second.

The technique for pan searing and roasting a good steak is to sear it well on both sides and then let it cool a bit before sticking it into the oven.  This will give you nice outside and a large pink center and a well cooked outside.

I use this method all the time.
