i shall have to give it a go then.

right now im baking a sweet potato, cooking up some chicken broth rice, and about to grill some chicken legs that were marinated in some tequila and lime for a few hours. YUM.

What about the Vegetarian Reuben non-fanatics!>!>!>!

I love me some serious reuben, lets just get that out there. But i've found that the corned beef doesn't really match my 'vegetarianism'.

SO, i invented the MushReuben. (I use the term invented pretty loosely)

All I do is substitute some mushrooms, any kind, instead of the corned beef. Its delic. The texture of mushrooms is pretty similar to meat (ha, i don't think i'll get you to believe me)

Ps, i also throw some sauteed onions on too, sometimes, for good measure.

Give it a shot!

Ooh, I bet that could be really good! Especially if you used a thinly-sliced portobella & marinated it in a peppery sauce, then grilled it outdoors or on a George Foreman. Someone else recently posted a tempeh reuben recipe...you should check that one out, too!

Portobella's never been my favorite, but I'm all for the peppery marinade.

You just made me think, that is really the one thing that would make a Reuben better is a bit of bite to it.

It could be as easy as adding pepper jack, or a marinade...

I think your on to something here.

marinate the slices in the spice mix from my corned beef thread. :thumbup:
