Omg every time I cook tempeh I remember how AMAZING is it and vow to eat more - but I never do for some reason.
I marinate mine in mirin (rice wine) and raw shoyu, cook it in some toasted sesame oil, sooooooo friggin good, better than meat.
Anyone have a favorite way to prepare tempeh?

Slice really thin and fry in oil until crispy. Really nice with a dip of your choice!

haha luckily its one of the main crops farmers grow here, though probably all gmo. I'd like to make a tempeh with some other bean. Wouldn't be a bad idea growing a row of soybeans.

A local vegan deli makes a mean vegan reuben with seared tempeh, homemade saurkraut, and vegan 1000 Island dressing on fresh levain bread. Amazing.

Tempeh is definitely worth making! It's as cheap as soybeans to make.
I honestly haven't tried making it yet. I bought some of that shrink wrapped stuff once from WF years ago and thought it was not very good so I haven't cared much to make it.
So now that I'm looking at tempeh stuff again, this is like.. just another kind of black pin mold right? My shroomies contam with black pin mold like no one's business so hard could making tempeh be .

theres a company local to where i'm at that makes great non-soy tempeh. Black bean, black eyed pea, etc.
Beats the hell out of soy IMO. Would definitely go that route if i were to make it myself.

My favorite way to cook tempeh, and a fairly traditional Indonesian way to prepare it is to dip it in a strong salt water solution them cover in flour and shallow fry them till cripsy. Dip in a shoyu, rice wine, toasted sesame, and nori flakes mixture (can add other stuff too.)
I make tons of tempeh; as of now my favorite is garbonzo bean with flax. Black bean is very good, and I just made my first batch of black eyed pea yesterday. Ironically i still havent made it out of soy lol. Organic soy is hard to find in stores; i had to order offline.

I like marinating it in teriyaki, lime and garlic for 8-12 hours then flash frying the shit out of it and carmalizing the sugars in the teriyaki sauce. Goes great with a stir fry situation - I'll have to try the salt water/flour method.

Ill have to try your marinade method too Honestly wherever you buy the spores from will have directions on their website of how to make it. If your really interested there are 2 books devoted to tempeh; the book of tempeh, and the tempeh production manual both by the same authors.

Yeah i looked on the some sites and was suprised how easy it is. The incubation temperature is the only tricky part it seems.
I'm assuming I could germinate the spores on a petri and save the culture... any idea how to go from a petri dish to more 'tempeh starter'? Seems like it'd be just harvesting the spores?

I was wondering if making koji starter is the same. I let some sporulate, dried it out, and popped it in the fridge for next time I'm making koji. I can't find any references to people doing this though.
I bought my soy cultures off http://www.gemcultures.com/ (tempeh is currently OOS though). They are really cheap and you can buy a whole bunch of different soy cultures too for making miso, soy, etc.

I LOVE Tempeh. I need to make some soon. I'm so glad I found everyone's recipes! We have this amazing Spicy Teriyaki I want to try with making sandwich's with.
