I have got a crapload of mint on my hands. Wondering what you guys would do with it, if you have any good recipes which call for it, if anyone has a good mojito recipe or anything of that nature.

hi

Mint-Cucumber Mojitos

INGREDIENTS
1 lime, quartered
2 sprigs fresh mint leaves
1 tablespoon white sugar
2 slices cucumber
6 cubes ice, or as needed
2 ounces white rum (such as BacardiĀ®)
4 fluid ounces club soda

DIRECTIONS
Squeeze the lime quarters into a highball glass, and drop the limes into the glass. Add the mint leaves and sugar. Muddle well with the back of a spoon or with a muddler. Place the cucumber slices into the glass, and fill with ice cubes. Pour in the rum, then top off with club soda. Stir gently and serve.

Spinach Cantaloupe Salad with Mint

INGREDIENTS
4 cups fresh spinach leaves
1 cup sliced cantaloupe
1 cup sliced avocado
1/2 cup diced red bell pepper
2 tablespoons chopped fresh mint leaves
 
1 tablespoon mint apple jelly
1 1/2 teaspoons white wine vinegar
3 tablespoons vegetable oil
1 clove garlic, minced

DIRECTIONS
Divide spinach between 2 serving plates. Arrange half of the cantaloupe and half of the avocado in a circular pattern over the spinach on each plate. Sprinkle with diced red pepper and fresh mint.
Mix together the mint jelly, white wine vinegar, oil and garlic. Drizzle over the salads. Serve.

Bangalore Cornish Hens

INGREDIENTS
2 teaspoons caraway seed
2 tablespoons salt
6 cloves garlic, minced
1/2 cup honey
1/2 cup lemon juice
3 tablespoons olive oil
1/4 cup mild paprika
4 teaspoons ground cumin
1 tablespoon ground ginger
1 tablespoon ground cinnamon
1 teaspoon cayenne pepper
1 teaspoon black pepper
2 large zucchinis, halved lengthwise and cut into 1 1/2 inch pieces
3 medium turnips, peeled, halved, and cut into 1-inch thick slices
2 medium red bell pepper, cut into 1-1/2 inch pieces
3 medium crookneck yellow squash, cut into 1 1/2-inch pieces
2 medium onions, cut into 1-inch wedges
1 (28 ounce) can canned tomatoes, drained and chopped
1/2 cup chicken broth
2 (1 1/2 pound) Cornish game hens, halved lengthwise
1/3 cup chopped fresh parsley
1/3 cup chopped cilantro
1/3 cup chopped fresh mint

DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C).
Coarsely grind caraway seeds with salt with a mortar and pestle. Mash the garlic into a paste with the caraway. In a large bowl, whisk together the garlic paste with the honey, lemon juice, and olive oil. Season with paprika, cumin, ginger, cinnamon, cayenne, and black pepper; mix well.
Lightly oil the inside of a heavy, ovenproof Dutch oven. Add the zucchini, turnips, red pepper, yellow squash, and onions. Toss with 1/2 of the spice paste. Stir in tomatoes and chicken broth. Toss the Cornish hens with the remaining spice paste, then arrange them in the Dutch oven, so that the cut side is facing down.
Cover the Dutch oven, and bake in the center of the preheated oven for 1 hour and 15 minutes. If a crunchy skin is desired on the Cornish hens, uncover during the last 15 minutes of cooking. Skim the fat off of the broth.
Serve hens on top of vegetables, spoon some of the broth over, and sprinkle with the parsley, cilantro, and mint.

I like to put a few green tea bags, fresh chopped mint in some cheesecloth, a dash of fresh lemon juice and and some turbanado sugar and let it brew. What a treat!
