A tasty Wine/Oil based pasta dish that's Easy

I like experimenting in the kitchen and I just came up with this today and it was delicious.

I don't like measuring out ingredients so I just go with my instinct. I suggest you do the same.

1. Get some noodles cooking. I like to add some salt and oil to the water.
2. dice up some chicken or tofu. Slice up saome zucchini, mushrooms (shitakes recommended) and onions. Yellow squash would be good too. Many things would be good in this.
3. heat up some olive oil in a skillet.
4. If using shitakes, cook them for a little while first so the unhealthy juices evaporate out.
5. throw in your diced stuff
6. pour a good amount of white cooking wine in there along with about half as much mirin.
7. sprinkle on these seasonings:
garlic powder (don't go overboard)
oregano
basil
parsley
salt
pepper
crushed red pepper(I like mine spicy, but you can leave it out if you're a wuss)

8. cook it up till everything is tender yet crisp and the flavors have merged.

9. throw it all on your noodles and enjoy.


If you don't have any mirin or white cooking wine, go get some because you can make many great sauces from them.

Also, I sprinkled some romano cheese on mine and it was good.
