shitake stems, what to do with them.....

anyone have ideas of what to do with shitake stems. sometimes they are ok to eat with the whole mushroom but somtimes a bit woody.

my idea was to grind them up and add some eggs whites to make shitake patties. or perhaps chop up very fine(maybe soak in lemon water to soften them up first) and use in a breading for fish or whatever else.

what do you think??

Dry them and grind them up and use as flavoring powder in dishes.
