softening vegetables

I'm making some tomato soup, and I'm just wondering about the directions. They want you to cook the celery onions and carrots over low heat until softened. Why is that when they'll soften when I add the tomatoes and chicken stock and bring to a boil?

because they are quite hard vegetables and if you were to add them afterwards, then you'd have crunchy tomato soup. does the instructions only say to boil all that? is there no pureeing to be done?

sauteeing them first caramelizes them and adds more flavor. this mir poix is almost always added to soups and serves as a flavor base upon which other flavors can be added to build depth.

but on low heat it won't carmelize. The recipe just says to soften the vegetables for 10 minutes.

well, after the softening, you add all the liquid and simmer for like 20 minutes, then throw it all in the blender.

Gabbas Tomato Soup Recipe.


15 lbs RIPE roma tomatoes.
1 yellow onion
1 white onion
1 bulb garlic
1/2 cup olive oil
salt and pepper to taste.
2 to 3 cups buttermilk
fresh basil

Cut up half of the tomatos into large chunks, remove the ends and remove the seeds. Par boil the remaining tomatos, peel and de seed and set aside.

Cut 1/2 of each onion and chop into chunks.

Peel the garlic and in a bowl mix everything with the olive oil, salt and pepper, spread out on a sheet pan and broil on the lowest rack till roasted but not burnt.

Pure this with the buttermilk and the peeled tomatoes, add basil and adjust seasonings to taste...

Simmer to heat DO NOT LET IT BOIL! Serve with crunchy bread.



Or Pure the roasted stuff with the peeled tomatoes, add some browned sausage links, parmesan cheese, oregano and parsely. Stew this for an hour.

Serve over flat noodle pasta
