Easy Mushroom Gravy

wrote this up for a few others, figured I'd post it here as well. It's just a basic gravy recipe i got from gramma that I decided to add mushrooms to, but I guess a lot of people don't know how to make gravy, heh.

tried it with chants, morels and regular storebought agaricus. all have been good, I think pretty much any other mushroom would go good this way too. used chants for the pics

1. clean the mushrooms, slice em up with some onions, less onions than mushrooms


2. heat up some oil in a pan, throw everything in there to cook. add some garlic salt/pepper/whatever. the mushrooms will lose a lot of liquid if they're fresh, don't let it all boil off, just get the mushrooms and onions cooked how you want them.


3. take the cooked mushrooms/onions out of the pan, leave the liquid, there wasn't much in the picture cause the mushrooms had been in the fridge a few days, fresh ones will usually leave more... turn the heat down. put some butter in the pan with the liquid and get it melted.


4. throw some flour in the melted butter/chant liquid mix, at least a couple tablespoons.


5. mix the mushroom liquid/butter/flour well.


6. add milk, I don't keep track of how much, just eyeball it. i usually throw some pepper/salt in the sauce now too. stir until smooth.

7. stir it frequently and cook over low heat, it'll thicken up in a few minutes. if it's too thin add more flour, too thick add more milk. then you throw in the cooked mushroom/onion mix from before...


that's it, easy, quick and pretty damn good. goes well with chicken breast, pasta, or whatever.

Thats how I do it too! Adding soy sauce is also common to add flavor, and darken the color.

Using chicken or beef broth as the liquid works well too.

Hmmmm,

I have alot of chicken breasts thawing in the fridge now. I was going to make just bernaise, but now I will try this as well.

Thats kick asss.

Im glad to see that you cooked the flour with the butter first and then added the liqued.  This is the key to a great gravy.


Ill bet that that goes great over bisquits. :grin:

Sorry for resurrecting such an old thread, but I really like the pictars. 

Also, I do a variation of this recipe with the mushrooms cut smaller with bacon and or sausage being the base oil supplier.

I would like to try this recipe with shiitake.
