I purchased a 22 qt. roaster oven not to long ago.(http://www.hugediscountmall.com/Large-Electric-Roaster-Oven_p555.htm)

I saw Agar post a 12 qt. similar to this recently. If i wanted to pasteurize straw in bags, could i just submerge the straw for like 20-30 minutes then drain, fill bags, put in roaster oven, and set at 170 for 45 minutes?

Do you have to completely submerge the bags in water, or do you just put some water in the bottom followed by the pan plus a little water in that?

DO you leave the bags open or tie them up with a zip tie?

no the bags do not have to be completely submerged, as long as you leave the top on the roaster, the temp should be good throughout the whole thing. but you are def gonna have to pasteurize a bit longer than 45 min.. try 2-4 hours or jus make sure the interal temp is above 160 and under 180. hope this helps

seal off your bags with clothes pins or rubberbands or something.. do not leave them open, especially if you already achieved correct moisture content..

So long as it has a dial heat range under 180F.
It should work fine.

Yup, put water in it.
Which will give you more even heat.

Plastic bags sealed semi-loose with a rubber band.
(so any mild steam generated is somewhat retained.)

I would advise pasteurizing several hours in the 150F range.
