Need suggestions on these casings
    #539272 - 02/03/02 02:25 PM (19 years, 8 months ago)

I have tassies and b+ cased. Both casings have pulled away from the sides........b+ have many pins coming out from deep in the casing on the sides where it has pulled away. The tassies only fruit in the corners. Any suggestions of what to do with these casings? Would dunking help the casing layer and allow fruitng all over rather than the sides under the casing?

Im not sure about steps you can take now..maybe up the humidity, generous spraying.

However when cakes pull away from the sides like that it seems to indicate a very dry casing..you need to look at your formula and up the water.

Dunking may help. I would work on keeping your casing moisture up next time. I am misting frequently between flushes to ensure adequate moisture in my casing. Once your casing layer dries out it is hard to rehydrate. I have found that it usualy hardens up and once that happens your screwed. If I were in your situation I would saturate the casing layer for a while. Make sure water does not build up in the bottom of your tray.

Good luck,
Joshua
