I found this recipe, I think its the best Ive seen so Im trying it now.

Thanks for the tips guys

Tender, juicy ribs are no hill for a stepper, whether they be baby back or full grown front. "Baby backs" really aren't ribs, they come from too far astern on the carcass, but they have gotten big press and are tasty. Cook either back or spare ribs the same. The real secret is cooking at a temperature around 215*F. for 5-8 hours over good wood coals or charcoal.

Select your ribs, smaller being better, looking for more meat than bone and bright colored flesh. Trim fat and remove the membrane from the underside.

Prepare the grill for long term low temp. cooking. Baste the ribs with the basting sauce and let them dry while they reach room temperature.

Baste again and place on the grill. Baste and turn at 30 minute intervals for 5-8 hours until tender. Do not let the temperature rise above 225 for extended periods. Finish off with your favorite barbecue sauce. Apply when the ribs are done and coals are cooler.

If that does't knock the knickers off your sheela, I'd look about.

Good eating,
Smoky

Making ribs is like making a fine wine. The more time you give them, the better they usually come out.

Set aside a day, and cook those suckers all day long.

+1 for good sauce and slow cooker. That's the secret to anything- cook fast at high temps, shorter cooking time, crisper food. Cook slow at lower temps, much longer cooking time, much more moist food. Works the same way for chicken too. Tonight I'm cooking a chicken for 5 hours at 250, whereas the package suggests 20 minutes per pound (3.75 lbs) at 375.

The sure-fire, no brainer way to do this is to BOIL the ribs before you otherwise BBQ them.

This is the best way to prepare your ribs, trust me on this one.
The baby back ribs must be fully thawed for this procedure to work properly. If the ribs are slightly frozen the seasoning will not adhere to the ribs.

Using a knife, score the backside of the thawed ribs three times across the membrane (the under side).Do Not Remove the membrane it will keep allot of your good juices in. Now take your preferred seasoning or rub and massage the seasoning on the ribs, making sure to get some of the seasoning into the cuts you made.

You will need at least a 6in. deep pan and a couple of steaming racks to place on the bottom of the pan. Here is the trick add water and liquid smoke to the pan, for six racks add 3/4 cup of liquid smoke and 2 1/4 cups of water. Arrange the ribs vertically, bow out, bow in, bow out, bow in...Tightly cover the pan with a single layer of plastic wrap, followed by single layer of aluminum foil over the plastic wrap. CRITICAL: it is very important that the pan be tightly sealed, there can be no holes in the foil.

Cook the ribs in a convection oven set at 225f for 4 1/2- 5 hrs. The meat will practically fall off the bones when done. When the ribs are done, loosen and remove the foil and plastic wrap. Allow to sit for 15-30 min, just until they are cool enough to handle without breaking. Now remove the ribs from the pan being careful not to break them, lay the ribs out and brush each side with melted margarine or butter, at the same time applying some more of your secret seasoning or rub. Now place the ribs in the cooler for at least 3-4 hrs. You are finally ready to grill, just remember the ribs are already cooked just heat up on the grill apply BBQ sauce and there you go.
PERFECT RIBS... and if you like that real thick BBQ sauce on'em after each application place under the broiler to get the sauce to caramelize.

mix a bit of honey into your BBQ sauce of choice (or make your own i guess)that way it sticks to the ribs (make sure they are thawed) real good, put the oven at 200. Let it bake all day bout 6 hours, and brush em every now and then. When they are done, the meat will fall from the bone.
