very amasing shroom recipe

-equal parts duck foie gras and oyster/button/porta mushroom mixed with a little garlic and balsamic vinigar sauted with e and j brandy
-then put on top 6 ounce presimmered si2e filet minion and wrap in pastry dough/sheet dough. then cook at 400 degrees for 30 min little less if u like a little rare. enjoy with u favorite brown gravy mix

sounds good, but gravy mix??? wouldn't waist it on the foie gras. I would skip the vinegar and go with cognac to flambe the shroom mixture finely chopped (duxelles) add a little cream then reduce till shroom mixture is dry. Fry the foie seperately then top the steak (which has been seared) with the seared foie slice then duxelle on top, then wrap with puff pastry, egg wash, bake. Beef wellington without the pate.

good call :P cognac really? i kinda like the brandy aroma and flavor added myself.... but of course sticking to recipes is for the week of heart and fear of something dif. always love to hear a dif. version of something i make.... will have to try it the next time i make some up :laugh:

cognac is brandy made in cognac.
