devil'd eggs

love em

6 eggs hard boiled*
1/4 cup mayo/MW
2 Tablespoons yella mustard
1/2 teaspoon vinegar
dash paprika

Cut eggs in half length wise and remove the yolks to a bowl. Mix yolks and other ingredients and spoon back into yolk holes.

That is a standard recipe. I used Jalapeno mustard instead - tasty.


* to hard boil eggs start the eggs in hot tap water, turn on high heat until you get a rolling boil. Turn down to medium and cook 12 minutes. Remove from heat and run under cold water. Let the eggs cool for 20 minutes in cold water.

There is nothing worse than having the shell stick to the egg.  I hate that worse than a tobasco hangover.

when you try to shell the egg and the shell sticks to it and when you pull it off a piece of the egg flesh goes with it

That's a sign of a fresh egg (assuming it is cooked properly). the air pocket in an egg increases as it ages. Which is why rotten eggs float.

caviar, salmon roe, tobiko, truffle oil, chives, chopped olives capers and raisins, citrus juice and/or zest, finely ground cooked bacon, cheese tuile, cheese foam, tomato chutney, deep fried basil and parsley, confit of duck leg, pig trotter meat, lambs tongue, mushroom duxelles, concasse tomato and preserved lemon, piri piri, chili oil, mushroom soy, sesame oil, dill, smoked salmon, kippers, pickled onions and/or beets, herb oil, diced ham, toasted quinoa, sweet peppers, crabmeat and asparagus, slow cooked onions, cognac, hazelnut oil, verjus, seared foie gras cubes... I also do an egg within an egg using chicken and quail eggs, I have a thin layer of the yolk mayo inside the chicken egg then have the halved quail egg in the middle of that, trim it off on the cut side so it looks clean; looks real neat.

These are the best I like to add a little bit of bacon bits in the mix and I like to use about half mayonnaise and half miracle whip... MMMmmmmmm
