How Do you Make Good Biscuits?

I always mess up my biscuits so i was wondering if any one could help me out and give me adivice on how to make them perfect or close.

if you havent already, try using an iron skillet.

look, i have been in the kitchen for like over 20 years, it is ok, to open a box of bisquick & add milk & make those perfect biscuits, i mean why stress yourself?, don't get caught up in that from scratch bullshit stress, just add the fukkin' milk & make the Biscuits

its fucking easy
choc chip cookies:

gently melt 125grams of butter and a 2 tbs of peanutbutter together,transfer to a bowl and let cool
then you need:

3/4 cup of plain flour
3/4 cup self raising flour(sift both together)

then mix in 1/2 cup of quick/rolled oats and 1 cup of chock chips(cooking kind)

add one egg to a cup full of brown sugar,mix well,then add to cooled

butter mix and stir in

then pour the liquid into the flour and chopchip mix

get your hands dirty and make about 30 tbl balls of the

mix...flatten slightly and cook in a preheated oven for 10-12

minutes at 180C on a greased/buttered lightly tray then

let sit in tray for 5 minutes before putting on a cool rack

if you cant make these...stick to dried flavoured noodles :wink:

there are alot of recipes on the net. white lily is the most readily available brand in the supermarkets. and he's asking for "biscuits" which i assume in this country does not mean "cookie".

mine aint from the net...i actually cook them
and where i am from a cookie is a cookie but if you slap them together with icing or jam etc you get your famous biscuit

ya know you are right, in other places "Biscuits" are diffrent things, a south african guy once asked me for Biscuits & he wanted crackers. i was talking about the southern american Biscuits the kind you put "gravy" ( sausage gravy, basicly a beshimel with black pepper, and breakfest sausage, you use the fat from the sausage to make the roux ) on. In the south here is is a breakfest favorite, sorry if i misunderstood the orig poster & my bad.

I made tasty "drop" biscuits a few days ago with generic bisquick. I used a lot of butter and put some monteray-mix cheese in them YUM.

Those biscuits in a tube are damn good too. Only have to do one dish and it only takes 10 min.

You know whats good...

Take them tube ones, take a salt shaker top.
Open the tube, spread out the biscuits and cut out the centers with the salt shaker top...

Now that youve got doughnuts you just fry them in some oil.  About 4 inches in a skillet works, turning once. 

Cinamon and sugar in a bag to toss and your set for some good doughnuts.




MMmmmm  I remember my mom making these all the time when I was a kid..  Hot doughnuts in the winter were the best treat.     



Powdered sugar and a bit of water will make glazed doughnuts  :wink:

I wouldn't cut a hole in the donut, why waste that part just for aesthetics? The only reason donuts are like that it because they used to move them around on poles. It's a really great idea and I thank you for sharing it with us but I think anybody wanting to try it should at least fry up the donut middles later and make "timbits".

Biscuits. The key is to add the fat to the flour first before the rest of the ingredients. It's also good to use some vegetable shortening because it makes the flour tender, as well as butter, to give the dough flavor.

So take your biscuit recipe. Add all the liquids together with some ice and keep it chilling on the side. (Cold water keeps the dough from getting too sticky and also melting the butter).

Take all the dry ingredients and mix them in a bowl. Take your vegetable shortening and half your butter and rub it into the dry ingredients with your hands until you can tell that the flour has been coated with the shortening. then small cube the rest of the butter and just place it into the bowl without mixing it in. Then pour half the required liquid into the dough and mix it without really kneeding it. You want the dough to be lumpy and rough. It's perhaps best to fold the dough until it is all moistened. Keep adding a bit of water until the dough is almost sticky but not quite.

Then roll the dough out onto the counter and cut as you see fit. Bake at 350-400 degrees until a nice color.

If you want to add cheese and jalapenos then add the cheese in the shortening step and cut the butter back and add the jalapenos in the liquid step.
