Water on agar....
    #408185 - 09/29/01 10:22 AM (23 years, 7 months ago)

I made some agar, using the PDA tek. Everything looks good, except i see a small amount of water sitting on top of the agar after P.cooking. Is this a problem? How do I deal with it?
On another topic, I've put the jars of agar(1/2 pint jars), in some sandwich bags that I sprayed with bleach/water solution. Then wraped tight. There sitting in a closet as we speak. Any problems with this?

Did you cook the agar then pour it into the jars or did you pour, then cook?

You can let the agar cool and let more moisture evaporate before pouring into your jars if this applies. This should reduce the amount of condensation on the agar surface and the lid.

If you poured first, then cooked, allow the moisture to evaporate off of the agar by leaving the lid off, leaving the lid ajar or using filter discs.

You could also use less water in your recipe to reduce the amount of condensation.

Does anyone know the temp that agar should be poured at to eliminate condensation on the lids of petris, but where it is still *pourable*?

I cooked the agar, then I let it sit overnight(got alittle tired), then come morning, I cooked it again to liquify it(because it got hard by that time). After that I let the stuff cool alittle in the P.cooker, then pored the stuff in my jars. Then I put the jars in the P.cooker for 25min. Let everything cool. The rest you already know....

Agar solidifies at 40 C to 45 C, depending on concentration. So pour it at 60C or lower, and you will prevent much of the condensation. Another way to prevent condensation is to stack the petris up, when letting them cool down. The upper ones will show condensation, but the lower ones not.

the condensation does not form on the lower dishes because there is little difference in temperature.
