which mushroom species taste like meat?

im interested in growing some gourmet's, but only interested in any that can be cooked to take similar to types of meat.  i remember reading somewhere back in the day where a guy mentioned he cooked some mushroom that he favored and it tasted much like steak(cant find the thread tho :frown: )  If anybody could let me know which mushroom/s taste like steak or other meats, and the recipe to make them that way, it would be greatly appreciated.

do you mean Fistulina hepatica (beef steak fungus)?

some say Hericium erinaceus if cooked correctly has the taste and texture of lobster. Laetiporus sulphureus (chicken of the woods) supposedly has the taste and texture of chicken.

As far as I'm aware, Hericium erinaceus is the only one cultivated out of the 3 species I mentioned.

hahah, see, i got no idea what im talking about when it comes to gourmet's. maybe it is that species?  i wish i had eaten lobster before to know if it tastes anything like steak, lol, does it? i dont even know if i'd like lobster. I know i am down with shrimp, but never eaten lobster; shit is expensive.  when he said steak, i only assumed he meant beef steak, and im down with that, so it sparked an interest.

maybe he was full of shit...its not really a big deal to me if there really isnt any shrooms that taste like meat, it would just be cool to grow them.

i always got morels i can pick out in the woods :laugh: :heart:  even those are new to me, i only had them a few times last year. i got them from a kid who had them already breaded up with an unknown recipe and i fried up in butter and ate em....tasted something like a meat would.  damn morels are good, i see why they are such a delicacy.  I hope i find a shitload this year somewhere, would be nice. :heart:

im partial to oysters. im pretty ignorant about the whole growing thing, but they seem like a great easy to grow species.

i make them by frying them. oil or butter in pan, heat up a bit so its runny. put fresh (not dried) oysters in a flour and flavouring if you wish and put in pan. fry em up till you liek what you see.

oysters are nice but they are by no means meaty.

Shiitake have a kind of chewy/meaty texture but I wouldn't compare it to the taste of meat.

i find oysters have the same texture as shellfish. i agree, not very mammal like. personally i dont notice much taste in many mushrooms. more of a texture and then an added flavouring. but ive never had that Hericium erinaceus before.

Grilled portabella mushrooms. Tastes like steak and has a similar texture.

Personally, I prefer some nice big meaty Portobello Caps.



Just season them up with a little Season Salt, some Onion Powder, and some Worcestershire Sauce.



Them just BBQ them up... with or without your favorite meat.







Thay almost tasted as good as the steak itself  :laugh:

That BBQ was a Valentines day dinner I did up for the wife and I.
It went over VERY WELL!  :laugh:  A very Tasty evening  :cool:
And somehow, those caps taste better when you grew them yourself.

what about the stems? are they not any good for eating? or you personally just choose to eat caps?

Sure you can eat the stems, but those large caps are the greatest on the BBQ.
Smaller ports and stems from those big caps are best cooked into soups, stews and/or gravies. One of my favorites is Hamburger/Portobello gravy over mashed potatoes.

Brown 1 lb of seasoned hamburger in a pot.
Add 1 lb of finely chopped or shredded Portobellos
Stir fry for a few minutes to sear the mushrooms.
Add 4 - 6 cups of water and thicken into a Very thick gravy.
I usually add a liquid beef flavour, and thicken with Bisto Gravy mix and cornstarch. Season your gravy to taste, then Spoon over your favorite Mashed Potatoes, Egg noodles or pasta.

hahah, hell yeah man, thanks again for that. i cant wait to get some of them babies growing, might be lil while tho, i gotta find the info on how to grow them then get all i need.  but definitely thanks bro, i wanna grill myself some portobellos with some of that season salt, maybe some bbq sauce, i dont know, i will have to see what i like best :heart:

you can buy portabellos pretty cheap at just about any supermarket or grocery store. just take a spore print or make a tissue culture and your away!

Growth parameters and methods are pretty much the same as Cubes, only the temps are reduced by 10 deg. F.
Substrate of straw or straw/dung and any 50/50 casing will work.

so i can grow them on WBS, and just incubate them at 76F instread of 86

then fruit them at 60-65F inteasd of 70-75F ?

im just making sure your saying reduce 10 degrees on both incubation and fruiting both, or just one or the other..man thanks again for the help, i guess i should get on that right away since i can make on of my guest rooms cooler for these shrooms.

fuck yeah, so i already do know how to grow them. does anyone have any pics of them fruiting? do they fruit as abundantly as cubes do? like a bomb ass even pinset?
