Candied mushrooms

This works on most mild flavored mushrooms and is suprisingly tasty.
Now this is particularly suited to one type :wink: but works with marasmius,Pleurotus,and other more mild fungi for unique holiday treats.
this is good for 6-10 medium sized fungi.
8oz honey
2g Ascorbic acid
several fruit
an equal blend of confectioners sugar and turbinado or sucanat sugars

Disolve the ascorbic acid in a minimum of water.

add to honey

bring honey to a roiling boil till just ready to carmelize.

Place fruit in sealed jar and pour cooled honey over them

the honey will extract moisture and add sugar to the fruit.

when the fruit is shunken by half remove and roll repeatedly into the sugar mix.

Sprinkle a layer of sugar on a pie plate and place fruits on the bed of sugar.

Place in a front of a fan and finish drying the fruit like this holiday treat

the honey will take up water and become thin and syrupy. For many types one can reboil the honey to remove the water and the honey used to glaze meats.
For "other types which boiling may destroy interesting "flavors" the honey can be used as is to mull wine for a whole new "sparkle" to the punch.
