I'll never understand people trying to make food with dietary substitutions like this. Subbing out all the key shit and then making some sort of culinary homunculus absolutely fills me with sadness.

If you use whole grain corn flour, you add something of value, corn starch is void of nutrients other than carbs.

Corn flour = valid food.
Corn starch = highly processed crap.

The corn starch is to hold the eggs stiff not for the bread, I seen someone else on YouTube use cream of tar tar instead of cornstarch

Whole grain corn flour has so much corn starch in it it should bind just nicely. They chose corn starch because its pure white, for the photo, at the expense of nutrition.

Is all corn flour nixtamalized? I have some nixtamalized corn flour I made tortillas with like 3 or 4 months ago now, just flour salt and water, no bull shit
