My shrooms kit has done its job; they’ve grown, and the caps opened up this morning. The problem is, today is Thursday, and the only day coming up when I can take them is Saturday. I don’t have a dehydrator, so I’m not sure what to do... should I leave them attached to the substrate until Saturday morning?

The worst that will happen is you will have a mess of spores. You could also pick them and put them in the refrigerator in a brown bag, or something else that allows some airflow. You could also make tea and freeze that to use whenever it's convenient.
YOU SHOULD GET A DEHYDRATOR IF YOU CONTINUE TO GROW.

just keep them on the substrate you'll be fine. They might become a bit purple
