Matsutake mushrooms.
    #27546189 -

Went hunting today for matsutake mushrooms. Pulled up 8 total, 3 older ones and 5 prime ones. Have one of the older ones trying to spore print. The older ones we are planning on drying to save for later in the year.

At least I'm 99% sure they're matsutake, I've never actually found them before, but the environment was right everything else was perfect.

Cap white with brown scales. Stipe, white with scales, incredibly dense. Bottom of all mushrooms covered in the telltale grayish sandy soil at the base.

Smell. The small ones have more of a musty odor, friend says old socks, (I dont smell it) the large ones have a very strong cinnamon/spicy/radish odor.

Found many more older specimens in the woods confirming the larger ones smell the same etc. The stipes are not quite as firm as the smaller mushrooms but do not snap or explode like a russula or a amanita would.

I guess I should not have cut off the bases before taking the picture of all of them. Noted. Here's a picture of all the bases.

What were they growing from? In situ pictures are helpful. Looks like Tricholoma magnivelare, but wait for another TI confirmation.

Gotcha. Here's one of a small one in the substrate.

Environment is around Douglas fir and hemlock for the most part. Growing in lines like I've heard they're fond of doing. Very deep into the soil all of them.

Found on Whidbey Island Washington state deep forest.

I'm pretty sure they're Tricholoma magnivelare, but I don't feel comfortable with saying that I am confident with that ID, it's not something that ive seen much.

Apologies, I forgot I should have looked up the species I was trying to ID it as.

Tricholoma Murrillianum is what I'm 99% sure they are. We are near the coast, northern Washington. So it wouldn't be the species east of the rockies for sure. Haha.

Thank you so much for your help! I will wait for a trusted identifier to agree before we eat anything. But I'm going to start the drying process this evening regardless. The big ones can't wait anymore.

I'm hoping that cutting or trimming the gills somewhat would help make them prettier. But we want to have some dried for soups later on in the year.(assuming they are actually
tricholoma murrillianum)

Edit: Spore print is white.

Re: Matsutake mushrooms. [Re: Doc9151]

So we also asked a Facebook group for mushrooms and really the only one that looks off to anyone is the one with the cap that got wavy, but that's because it was trying to grow around a branch.

I just got too excited and forgot to take pictures before picking almost everything.
A mistake I hope I don't repeat.

I also found a species of amanita or russula that had almost the same exact cap as a matsutake as in, large, white and had some of the little brown scales on it that the matsutakes have. But when I picked it up, the gills were wrong, far too wide, and the stipe was very brittle, I was able to snap it in half quite easily. And it broke off unevenly. Also. The gray sandy bottom that we found on all the ones we think are matsutake was notably absent. Oh, also, it smelled like a mushroom. Nothing else.

So I've found at least one very convincing lookalike and was able to quickly dismiss it as such.

Judging by the very strong cinnamon/spicy smell that I get from the ones who've opened, and the musty smell I get from the ones that have still yet to open I'm as I said 99% sure tricholoma murrillianum is what I have here.

Just waiting on a trusted ID to confirm.

Those are matsutakes - The ashy ends on the non-bulbous stipes are a dead giveaway and everything else. you've mentioned - heavy, dense, doesn't shatter, distinctive smell, is totally correct. Usually in the same area you find matsis you'll see tons of Russula brevipes too - they peek out of the duff in a similar way, but they are easy to tell apart once you get close.

P.S. - I wouldn't recommend drying them... they are best fresh. I recommend tempura, chawanmushi (egg custard) & sukiyaki

Here's a comparison I made - Amanita vs Matsutake

Thanks!

So happy that we got so lucky on our first outing to find them. Next time will be even better now that we really know what we are looking for.

The only reason I want to dry the big ones is mostly due to them not being the most pretty. I only picked them because I wanted adults to help identify. (And was curious just how different they do taste) Regardless, the dried ones will be for soups and broths only.

The younger caps we are going to eat fresh. We have a few ideas, but I think first we are just going to saute them with butter and some garlic, to get a taste of them.

Then we will move on from there seeing what we want to use them in.

It's only 5 mushrooms but they're so big I can't imagine using more than 1 or two per meal, unless that's going to be the main dish I guess.

We got almost 3 pounds total so that's a huge win in my book. So excited to try them tomorrow. It's one I never tried because even if you can somehow find them they're just so expensive in the store there's no way I'm paying for that.

A little Matsutake does tend to go a long way. They are quite dense and don't tend to shrivel up and disappear quite like other mushrooms (like my 3 quarts of chanterelles can somehow turn into just a pan full once they are cleaned and cooked).  I've also heard you shouldn't really overindulge - they can give you a mild case of the runs if you do, but haven't ever experienced such unpleasantness.

As far as big vs small.... I've picked both and I haven't noticed a flavor difference really... the small ones are much, much easier to clean. Once they are open the gills can be really hard to get all the dirt out of- sometimes they just need to be sliced off... I think the Japanese like the aesthetics of the small ones better too... prettier in the dish, thus more expensive. Bigger ones tend to be a little wormy sometimes too... that can be a bit of a turn off.

Personally,  I never tried them,  they just seem so darn tough, I assumed they would be like eating gristle or something.

Nope, they cook up quite tender.  I've noticed the seem to cook better in liquids than in oil.  They really shine diced and mixed in with rice.

They are meaty, but definitely not tough, certainly not like wood-ears, which I actually like, but do think are kind of the gristle of the mushroom world.

My absolutely favorite way to cook them is to make chawanmushi  - steamed Japanese egg custards. The mushroom flavor infuses everything in the cup, yum, yum, yum... but they are excellent many ways - even just simply grilled or broiled with a little salt.

I haven't mastered Matsutake Gohan (rice) though... It always smells really nice, but I've never really gotten a good mushroom flavor out of it. I've tried putting the mushrooms in at the beginning and and the end, but alas, no difference. If you've got any tips - I'm all ears.

Tried them last night. And according to everything I've read, you shouldn't saute them because they will lose their flavor.

Well we didn't want to waste them so we used one as an experiment and dry sauted it like we did the chanterelles....

Not only did it NOT lose flavor, they were in fact SO flavorful it was like trying to chew on whole cloves or something and none of us could eat them. *total sadness*

Next time we are using less, in a broth or something. We like the flavor, but holy wow was that overpowering. The flavor lingered in the mouth for about 10 minutes. And it wasn't necessarily bad even, just way, WAY too strong.

Now we know. At least we didn't purchase them and mess them up haha.
