I have been making mead about 2 years as well but I totally wing it.  Got 2 going now.  My first was dry and I didn't back sweeten and it was gone within a year.  Gave away a gallon or more, only ended up keeping 3.  Can't remember how long it fermented, I racked once then bottled.  I can't even remember my recipes.  I'll have to lookup that Bray you mention.

My stuff now was too high SG and I didn't add any nutrient so it is slow, real slow.  I added raisins and something else before as yeast nutrients but only before pitching.

I drank a sweet mead a long time ago I really liked and if I could just get close, I would love it.

Would really like to try some of your rice wine,

have you tried blending yeasts?  Some of the best cider i've made i started with dry ale yeast, then pitched champagne yeast a few days into fermentation.  Sometimes people add champagne yeast to finish out when the first yeast stalls for whatever reason because champagne yeast is highly tolerant to stressful conditions like low nutrient or high abv

What yeast did you use?

I've been using Lalvin K1-V1116 with no problems with fermentation! It's mostly done within the first month, with only the off sugars left to ferment out.

every white wine yeast I've used was pretty aggressive.  That stuff seems like it should be fine at higher SG if it tolerates 18%

Here's a link to the Bray's One Month Mead recipe: https://denardbrewing.com/blog/post/BOMM5gallons/

His whole website has some pretty good recipes and information. He's a microbiologist by profession so he used science to perfect his recipes. His one month mead uses WYeast 1388 Belgian Strong Ale. It finishes primary fermentation within a week or so, depending on ambient temperature.

I found this recipe on the Home Brew Talk forum.

The rice wine recipe is on there too in the wine making sub forum. There's a huge thread on it. It's really popular because of how cheap and easy it is. You have to use Sweet or Glutinous rice (same thing), plain old long grain white rice is a no-go. Brown rice cannot be used either due to the husks not being able to be broken down by the mold culture. Jasmine seems to work, but Basmatti seems to be a bad idea due to how long the grains are. The yeast/mold culture can be purchased in basically any Asian grocery store. They're generally referred to as 'Chinese Yeast Balls' by English speakers. I believe the name in Chinese is 'Jiuqu'. I order mine from a company based in Toronto who specializes in them. I live in a small town and have no nearby Asian markets/stores.
