I think the fine grade vermiculite is used in the substrate and for the vermiculite seal. You use the coarse grade for casing because of that compacting thing. A straight vermiculite casing layer is certainly easy but probably not the best way to go. Next best is probably a combination of peat and vermiculite. From there you can add stuff like lime, or crushed oyster shells, or perlite, or whatever you think mushies like. Some people use Jiffy mix because it's pre-mixed, pour and go. It all depends on how important you think the casing layer is nutrient-wise.
