I start with salmon filets, not steaks, bones are shitty.
(warning no measurments sorry) For the marinade start with a bunch of soy-sauce, mix in a bunch of sesame oil(a beautiful thing), ground ginger(more is better), not powder but the wet stuff in the bottle sesame seeds(not necessary), roasted garlic, or regular garlic doesn' matter, some lemon or lime juice for good measure,
now let your salmon marinade for about an hour or so, get it good and soaked up, now cook however way you like, i prefer grilling, but the foreman grill works well for this, now while your bad-ass salmon is cooking, cook up some shittake or porcini mushrooms or whatever kind of mushrooms you like, and use it as a side dish or put on top of your salmon and serve, i absolutely love this method because the 3 liquids you use to marinade with(sesame oil, ginger(it's kinda liquidy if you havent seen it before) and the soy sauce) all have really nice strong flavors and make the fish somewhat sweet and very delicious,
ive also used this for tuna before, but something thats cool to do, is right before you grill your tuna, roll it completely in sesame seeds to the outside is completely covered and cook it the way you like it, i prefer having the inside sushi and the outside nice and crispy from the flamed sesame seeds, enjoy.
