This green stuff is making me lose my hair!

3 out of my 6 cakes are headed for the trash again! that green s*** is killing all my projects.

Using rye then straw as a casing substrate. Only thing I'm questioning on this run is the heat (just wasn't there) I think they were colonizing in 70oF and the jars took almost 1 month to cover. This time I pasteurized the straw instead on sterilizing it.


Then hung overnight to dry (I'm sure it gets contaminated here, but this is what I have read to do) and cased with the rye, in a Tupperware, plastic wrap overtop then the Tupperware lid (lid isn't air tight).

Can anyone here tell me what I might be doing wrong out of 13 cases now I think I've had 3 work. my success rate in rye and straw is terrible but I know it has to get better.

have you exposed the straw to air at all in drying process,if so try to cut down on that.try mixing your casing up right in an oven then just bump it in your container.least exposer the better the green meanies rly like straw bro.my cat well ya he might be nuddered but he knows lol.

is this what you meant to write? casing layers must be non-nutritive (coir, verm, peat etc). otherwise any old spores can land on them and start eating.

Rye and Verm? Never tried that one. I have read many stories of people casing in Straw, and dung? Both those a nutritive substances.


Charvo, How do i hang the straw to dry then?? Hang in the warm oven?

how much grain to straw are you using????

stay withing 1 part colonized grain to 5 parts straw by volume!

if you are using 1 part grain to like 30 parts straw you will fail!

just squeeze the access water out the top of bag and let cool down for a few hours

i put the straw in the bag when it's dry,then i add enough water to miosten the straw maybe a lillte extra cause some of it will eveporate then you cook it.basicly when it's done the straw will be just right as far as the moister level.

one more thing when using oven bags it has those plastic ties,when you put it on leave kinda loose so air can excape cause it will expaned when heated.i use a pressurecooker for this but a microwave will work.if you use a microwave use alot more water cause it dry out,a pressurecooker doesn't do that it keeps the moister iinside it.

i hope this was fairly easy to understand.

My friend says that is unnecessary. He hangs his straw from the fence in his back yard to drain. No problems.
