Is there any truth behind a mushie being more potent the faster it blues after being bruised.

Not really, the bluing is a reaction of the psilocybin/psilocin to the oxygen in the air, called oxidation. Some may blue faster than others due to breaks in a stem, others may bruise slower because of a thick stem with a hard layer of mycelium over them. Oxidation times do not predict potency.
