Hot shrimps and sauce

Hey i just started this dish at work and it is well appreciated.

Peel around 25 big shrimps, put them in a bowl and keep the peels and heads. Chop 4 loaves of garlic and one hot pepper including seeds very fine and mix it with the shrimps. Squash limejuice from one lime on the shrimps, put some pepper and olive oil on them, mix them well and put them away in the fridge for a few hours.

For the sauce: put some olive oil in a simmering hot pan and add all the peels and heads from the shrimps and a onion sliced in four, stir well. When most of the juice is eveporated, flambeé it with a good dose of calvados, then extinguish it with cooking cream, and add pepper and a little bit of curry spices. Let it boil in for about 10 minutes, and filter the sauce. I myself like to put in a little bit of pepper in the sauce too, i add it from the start.

Bake the shrimps in a very hot pan a short time, and bon appetit.
