Preserving Hens
    #11137276 -

'tis the season for hen of the woods. Delicious as they are, I would prefer not to eat them at every meal for the next month to use them up before they go bad. Furthermore, they'd be excellent in February when there's snow everywhere.

Any suggestions on how to preserve them? Drying the whole hen at once doesn't seem to make sense. Should I cut it up and then dry it, or can I just freeze the whole hen as is?
