I don't see too much difference. The main thing that they are both doing is pasteurizing and not sterilizing. Do what is easiest for you because they will both work.

I get my stuff to field capacity pack it in an oven bag, and pasteurize at about 165 in the oven and always works great.

As long as your manure is aged just throw everything in the pillowcase(manure, verm, gypsum and anything you want) mix it well and break up any chuncks while it is dry.  Put the pillowcase in a large pot of water 160-170f for 1 1/2 hours,  I leave it in the pillowcase until it has cooled and is ready to use.  You can ring it out to Field capacity while in the bag.
