Does anyone know if you can wire a submergable fish tank heater to a digital thermostat you would find on a house wall?

Most house thermostats, especially the digitals, are made for 24VAC. They're made to switch low voltage at low currents. They would go up in smoke instantly if you wired your heater through them.

You could use a thermostat made for electric baseboard heat though. They make digital ones of these too, though they aren't as common.

Years ago when I was brewing my own beer I bought a Johnson Controls A319 (about $150) and used it to control the compressor on a large chest freezer to do summer fermenting and lagering (cold fermenting). The A319 is 100% solid-state and very accurate. Other companies make similar controls. A bit overkill, but you could use a control like that to control your heater.
