ever had santa maria tri tip bbq? wow. i'm eating some right now and it is mighty tasty! just busted one out of the freezer from the summer. we stock up every summer on this shit cuz it is such a treat!

Are you talking about the Santa Maria in Santa Barbara county?

A southern California resident, but I don't play that whole split-state favorites game.  Hell I went to school for two years in Santa Cruz and half my family is now just across the northern border near the town of Ashland, OR.  At any rate, I fancy myself quite the tri-tip aficionado.  Matter of fact and oddly enough, given my regular purchase of this cut for my backyard barbeque, I never even knew it was often referred to as "Santa Maria steak" until very recently.  A delicious piece of beef to be sure, if prepared appropriately.  One must be exceptionally careful in the cooking time and temperature.  After gettin' the swing of it, you can usually tell the doneness by how firm it feels when you squeeze it with your BBQ tongs.  Overcooking tri-tip is a nightmare of chewy toughness... may as well be eating beef jerky at that point!

I like to marinade these large cuts overnight whenever possible, with lots of freshly ground black pepper, perhaps some herbs and definitely some garlic and oil, and don't typically add any salt until just prior to grilling (and corse sea-salt at that) - though sometimes I will use soy sauce in the marinade if I'm being lazy.  Tend to start with the grill screaming hot to get some sear marks on either side of the steak, only for about 2 - 5 minutes each side (depending on the size of the cut).  Then adjusting grill temp to medium-low, turning the tip every 10 minutes or so, for a total grill time of 25 - 50 minutes (depending on the size of the cut).  I take it off when I figure the center is still fairly rare, wrap it up in a tight foil tent with enough air inside to trap steam and heat, and let it rest for at least 10 - 15 minutes before I even think about slicing it.  It is this resting period that is so crucial in making sure that your center is a nice medium-rare without having to overcook the edges... you are actually still cooking the meat in the tent with the residual heat!  If you try to finish cooking on the grill, you'll no doubt end up with tough dry corners, or you'll pull it off when the corners are great alongside a center that is too rare.

We get great deals on that stuff 'round here too... around $1.75 - 2.75 / lb. on special (which comes around quite often). Great way to feed for a party! :thumbup::thumbup:

i worked at the meat market over the summer and oh my god i would get tons of shit for free.. best job i've ever had.

yeah. that's the one!

rib-eye does have great flavor, and i will devour just about any meat, but i was havin that bomb ass santa maria stuff saved from the summer for dinner tonight, and i just had to share! :mypleasure:

i bbq'ed up some boneless chicken thighs and cooked spaghetti w/ alfredo sauce and made some ghetto garlic bread (butter and garlic pepper on sliced bread)

all with a big glass of milk

jailbreaking my ipod is a pain in the ass.. i'm using my neighbor's wireless and it keeps cutting out.. it's on like the other side of teh building.. maybe i should just ask my other neighbor for their password :tongue:
