Peanut Saucey Sauce dish (vegan!) for two

this is the best peanut sauce i've made to date:
Ingredients:
For Saucey Sauce: * !/4 cup or slightly more (im a coco milk type of guy) of coconut milk * 1/4 cup peanut butter (no salt, preferably) * 2 teaspoon Soy sauce * 1 teaspoon red vinegar * 1 teaspoon chili flakes * 1 Tablespoon brown sugar * 1/4 to 1/2 lime * 1/2 a clove of garlic, crushed * a dash of tumeric * a few bits of basil * a few tablespoons of water, to be added last --------------------- * 1 cup dried rice --------------------- * 1 teaspoon Earth Balance or Pure (or local vegan butter replacement) * mushrooms of your choice (i just use button) * 1 bell pepper * Broccoli * Baby corn --------------------
Start with rice, 1 cup dried rice should yield 2 cups. Mix all ingredients for peanut sauce, adding water last. put on a pan on low heat, stirring occasionally. I put the vegan butter on a skillet, medium heat, added 5 sliced button mushrooms. i then sliced up my pepper, added it in. Next, i tore up a bit of broccoli with my hands and tossed it in. finally, a little slicing for the baby corn. i turned up the heat, stirring occasionally. checked on peanut sauce. i put rice on 2 plates, added on the veggies, then smothered with the sauce. good with a white beer, like hoegarden. enjoy!

Damn that sounds good! New lunch idea for next week 
I think I'll try some unseasoned rice vinegar since I have no red vinegar.

I was thinking it sounded pretty good, minus the mushrooms, and then you mentioned Hoegaarden. Well, now I need to try it.

Emulsify: Combine oil and water (or other liquid), then add a stabilizer (such as the lecithin used by Earth Balance) to maintain the mix. Earth Balance also adds soy protein as a thickener. As it is not hydrogenated, it will become liquid again at room temperature. Mayonnaise is an emulsion, as is vinaigrette salad dressing.
Hydrogenate: Vegetable oil is reacted under pressure with hydrogen gas at 250 - 4000F for several hours in the presence of a catalyst such as nickel or platinum.

You may have read some (misreported) information about soy and lowered testosterone levels. It is important to realize that the research which found a potential link was done using isolated soy proteins, which are highly concentrated derivatives of the soybean. The doses used with male mice were VERY high, and not comparable to the amount of phytoestrogens you would consume in a normal diet containing some soy products.
The main issue to be concerned with is excessive soy supplementation, not moderate consumption of soy-based foods.

Does the difference between healthy and unhealthy soy also stem from whether or not the beans have been fermented?
Didn't England put a ban on soy sauces produced from unfermented beans?
Aren't there also links between soy consumption and osteoporosis in women?

Some health experts think so, but the research thus far has been inconclusive. The only conclusive studies have tested the effect of soy protein isolates.

Not that I know of. They DID ban GMO products, though, which included GMO soy.

Yes, several studies have shown that replacing animal protein with soy protein has a positive effect on bone loss in women. The rate of osteoporosis increases with an increase in consumption of animal proteins...probably because the body needs the calcium in order to utilize animal-source proteins.
