this is one of my favorite dishes and there are soo many different ways to make it that produce different results. i used to have one recipe that i stuck with more often than not because i realy liked it over all the rest. however, suprisingly enough considering how much i love this dish...i havent made it in a couple of years. i still remember most of the ingredients but im off a little bit and cant seem to find my recipe so i gather untill i find it ill do some more experimentation with other recipes and i know there are thousands of recipes on google, id like to here what some fellow shroomerites suggest for a good thai peanut sauce recipe. the focus is on the sauce, but id also like to here variations in what you serve it with.

1 can massaman curry paste 2 cans coconut milk 4 T sugar 2 T fish sauce 4 T peanut butter red chili flakes 2 kaffir lime leaves
fry the curry paste in hot oil until smooth add lime leaves if desired add coconut milk and bring to a simmer add sugar and fish sauce to taste stir in peanut butter, chili flakes simmer while stirring until thickened
this will scorch if its not stirred, and like bean soup, the entire batch will be ruined. brown sugar, or palm sugar can be substituted for white. a knob of ginger, or galangal can be added while simmering.
good with cold soba, plain rice, blanched veggies.

i shoulda specified vegan.... but so can i minus the fish sauce and still come out with a bomb ass peanut sauce? ill rock the fish oil sometime but the person im makin it for is vegan.

substitute with a little less soy sauce, and add a splash of vinegar for a little bite.

it'll be good, but it will still taste different. something about the fermented flavor of fish sauce that is irreplaceable for me.
