I had this problem a couple times before myself. It's usually due dryness of the cake if you have been gentle and havn't bruised them.

Are you spraying it with a myster? The force of the spray can bruise the mycellium and cause it to turn blue.

Thats my theory and I'm sticking to it!

The bluening is caused by oxidated psilocin...
Its nothing to worry about..
Probably just from bruising...
