should I harvest?

I am growing PRs in 50/50 casings, and in one of the casings there are two huge mushrooms in the very middle, but all the other mushrooms are still very small. I need to go ahead and harvest the two big ones, but would it be possible to just harvest those two and leave the rest in to grow some more? Is it always mandatory to harvest them all at the same time?

yes go ahead and havest those two i havest periodally until the flushes get to slow then recase and start over again

I always do that. I don't think there should be a problem. Make sure you fill up the hole with moist casing.
