Well it seems the Jelly Ears are popping up all over the place here in NE Georgia. I love the look and feel of these fungi, though I've never enjoyed their taste too much. I think their interesting texture makes them great subjects for macro photos. Click on these thumbnails for high res versions.
This one really looks like an ear:




Also lots of Hypholoma fascicularae - aka sulfur tufts in wood chips and near stumps. I found this clump mixed in with a patch of its cousin, Hypholoma sublateritium.

Yep, you find them in chinese dishes sometimes. Evidently they have to be fully dried first which takes a while. I've never been too tempted.

I use them all the time when I'm making Chinese stir frys. Believe it or not but Pot Noodle use them, I've seen them listed in the spicy pot noodle if I remember rightly lol

I wipe them down first to get any bits off and then dry them in the oven on it's lowest setting until cracker crisp. Doesn't take them long to dry, about 10 to 15 minutes maybe. Then I just reconstitute whatever I need at the time in water or rice wine and finely cut into thin strips with scissors.
Be sure to add the mushroom slices towards the end of stir frying or else they can explode and shower you with hot oil! 
They don't have all that much taste but absorb other flavors well and have a lovely texture IMO.
They're also one of the only mushrooms that you can find year round which is an added bonus

They don't have much flavor themselves, but they add a great texture to soups. When used that way their lack of flavor is nice, because you can use them in any soup without having their flavor interfere.

Hehehe, I like your ears Xmush.
When I went to China for two weeks, I regularly bought those mushrooms or perhaps a similar species at the market, and I found the flavour to be less than subtle! The texture was nice, and the flavour noticeable in any dish I prepared. The flavour was meaty.

Very nice score Xmush. Haven't seen any of those in years. Use to find them out in the Kingston area along with many Aluria aurantia (carrot cups and other similar species).

You should head down to Georgia MJ, these things are EVERYWHERE right now. Stock up on these in the winter, morels in the spring, and weiliis in the summer!
