Alfalfa can be used as an addative to the substrate mix if the mix is sterilized in a PC but it does not work if you intend to use it as a substitute for pasteurized straw. Alfalfa contains a lot of nitrogen and contams easily if it is not well sterilized.

i wouldn't recommend it,
most who've tried it have failed.
it does contam very easily.

Pasturized, the stuff will work for mycellium expansion. I made a few cake pans with thin layers of timmothy hay and they each flushed three flushes before contaminating. The first were 1 ounce dry each on average, using two birdseed cakes per tray. second and third flushes were single huge mushrooms.

Since then I've purchased actual straw in mini-bales at craft stores and have had much better luck, but good luck to you.
