Old cillantro tastes like shit

makin buros today, and the cillantro is gettin old and dryin out.. it's like eating grass clippings in my burito, :thumbdown: but worse... how is it that fresh taste like the bomb, old taste like ass?

it's more of a dried out than rotting... all the good flavor is gone and now it just taste like day old grass clippings... still green, but a little dry.. :nonono:

I have a large mouthed steel cylinder that's about 10"
tall that you use to put your cooking utensils in...

I fill it up about 1/3 with water and put all my fresh herbs
in there....mint, cilantro, parsely.

They stay nice and fresh and add a nice touch to the
look of the kitchen.

I work out of my home and cook 80% or more of my meals.

plus I love lots of fresh herbs.

um, i have some thin sliced meat, (a round steak cut about 1/4") and um, sour cream.. and um, well, that's about it..

as a matter a fact i have onions, a gang of tomatoes, and all those fixins you mentioned, in a search for making a carne asada seasong.... i bought some from the gonzalez mart, which is good at first, but it's mostly msg...

spices i have
california chille powder
powdered cumin
mexican whole oragano
paprika
ceyene powder

the kind from the mexican end cap

i also have garlic salt/powder, pepper, itiallian seasongs... and tortillas... i'm tellin ya, i'm all set to make the burro's, but making that perfect mix is just almost thre... i get a strong feeling that you, afoaf, are the key to unlocking burrito goodness...

it's all by feel.

season with cumin and chili to taste.

the key to carne is SEARING THE FUCK out
of the meat and veggies.

slice the meat into thin, slender strips and
add seasonings.

heat pan up nice and hot

throw in the peppers, then the onions then the
meat.

season in the pan as well.

cook them hot and sear sear sear

you want some blackened bits on the peppers
and onions

then mix it all up, throw it in a tortilla and add
the sour cream.

i'll have to try that... what about marinating it? i never liked the taste of cumin, not in any normal quantity, just small amounts here and there...

the thing to watch out for is the low heat...

it cooks slow, makes the veggies soft and soggy.

you want things al dente and a little blackened.

the thin strips keep cooking time low.

the main seasonings are:

salt
garlic(salt/pepper/fresh)
chili powder
cumen
cayenne
pepper

other good fixins...fresh cilantro shredded
over the meat after it's been cooked, diced
fresh or whole roasted jalapenos...etc.

yea, high heat for sure.  i'll try the blend... i hate looking on the internet for recipies... cooks.com has a recipie for "mexican spanish rice"... so i was like "sure, everyone of these recipies looks like they suck, i'll look at that" so the first ingredient was "box of spanish rice a roni - prepared as directed" :nonono:

hahahahaha

spanish rice is super easy.

www.epicurious.com is good...click recipes tab.

for spanish rice...use some long grain white
or brown rice...and instead of using all water
use a can of green chiles and a can of (mexican)
stewed tomatoes.

then cover and simmer.

super easy.
