Calcium carbonate?

I wan?t to case one of my cakes today and I was wondering what kind of store do I buy Calcium carbonate. Another thing I need help with is a contamination preventer, I?ve heard that acidic conditions ward off bacteria, what choices do I have? I have no idea where I can get hydrated lime for example, what else can I use.

Thadoc,You can purchase hydrated lime at most nursery's or check out the garden section at walmart/Kmart.The idea behind adding Calcium carb is to lower ph.Contaminents love an acidic medium.As your mushrooms continue to flush the casing/substrate will become more acidic increasing the potential for contaminents.Hope this helps.

What if I use ph down solution (from hydro setups) in the water? How acidic should it be?
